Date Night: (Long Distance) Valentine's Day

Our dinner and a movie!

I'm aware this post is a little behind the times, but hey! Maybe that means it won't get lost in all the other Valentine's Day posts out there. So, as you might know, I am dating my high school sweetheart. Because we attended different colleges and have different graduation dates, we've been long-distance for a few years. This year for Valentine's Day, we decided to have a regular dinner-and-a-movie date from 800 miles apart. It was fabulous!
First, we decided on a movie: Moneyball. We each had a code for a free Redbox movie, so that was pretty awesome. Then Jonathan asked me to pick a recipe from Pinterest for us to both cook. I wanted to pick something that we already had most of the ingredients for and/or would actually use again, so I decided on lemony pesto pasta with edamame and almonds:

Unfortunately, neither of us could find edamame that night (I've seen it before in Santa Fe; I guess I just went to the wrong grocery store that night.), so we improvised. I added mushrooms, and Jonathan added peas. I also used bow tie pasta instead of spaghetti because I already had a bag. It was delicious. The spinach added a nice touch, and we all know how much I love pesto (see Exhibit A and B).


The movie was also phenomenal. I highly recommend it if you haven't seen it yet. Unfortunately, though we Skyped while cooking dinner, I couldn't Skype during the movie because I had to use my laptop to watch it. Instead, we texted throughout, mostly about our confusion over the sport of baseball. (What kind of sport lets you trade players the day of a game?) Overall, it was a lovely evening and only could have been better if he had been sitting on the futon next to me! (Obviously.)
